Much to the surprise of the public, the majority of all seafood changes hands multiple times as it is funneled through several wholesale companies.
The process in which seafood travels from the fishing grounds to your plate is very complex.
The standard chain of events is as follows: Fishermen harvest the product out at sea. Fishermen return from the fishing grounds and sell their catch to a processor. After minimal processing, the fish is then sold to a wholesaler. The wholesaler then transports the product to their warehouse where it is usually further processed, and stored in large freezer facilities.
From there the seafood is sold to another wholesaler

 



who in turn stores it in their freezer before distributing it to their small network of grocery stores and restaurants. The public then has the opportunity to purchase it. This is the best-case scenario. Often more wholesalers are involved. As the product changes hands, it is subjected to rapid heat/cold fluctuations, and does not always maintain proper temperature.
